Vegetarian option - stuffed vegetables. Fry sweet peppers, chopped onions, tomatoes and the inside of the zucchini, stuff the semi-finished product and bake until cooked, sprinkled with cheese on top.

With mushrooms.

For the filling, you can use any mushrooms. I recommend the following filling option: fry the mushrooms in butter, then add the chopped onion to the pan and cook them together for about five minutes. Salt the filling, pepper. Then pour in the cream and simmer for another 5-7 minutes. Fill the “boats” with the minced meat, sprinkle grated cheese on top and bake until cooked in the oven.

Zucchini stuffed with vegetables baked in the oven

The advantages of this recipe are that you get two dishes in one, since the vegetable “pillow” is also a side dish for fragrant zucchini. The dish does not burn, see for yourself, you can see it in the photo!

For stuffing zucchini we need:

  • 1. A medium-sized zucchini, or two, depending on the number of eaters.
  • 2. Pork or any other meat - 0.5-1 kg.
  • 3. Onions - 4-5 medium onions.
  • 4. Salt - to taste.
  • 5. Pepper and any spices to your taste.
  • 6. Egg.
  • 7. Flour for roasting zucchini.
  • 8. Vegetable oil.
  1. We clean the zucchini and cut across into pieces about three fingers wide. Carefully cut out the core with a knife, leaving the walls about half a centimeter thick. We put the cut core aside, it will still come in handy.
  2. Cooking minced meat. We twist the meat in a meat grinder along with onions, salt, pepper, add an egg and spices to your taste.
  3. Stuffing zucchini. This should be done tightly enough, since the minced meat will shrink a little during the cooking process.
  4. Dip stuffed zucchini (bottoms) in flour, and fry over high heat in oil. This is done so that the meat juice does not flow out.

For the vegetable pillow we need:

  • 1. The remaining pulp of zucchini.
  • 2. Bulgarian pepper - 3-4 pieces.
  • 3. Onions - 2-3 pieces.
  • 4. Ripe tomatoes 4-5 pieces. You can use homemade tomato juice.
  • 5. Carrots - 2-3 pieces.
  • 6. Vegetable oil - 0.5 cups.
  • 7. Salt, pepper.
  1. Chop the onion, fry in oil until transparent, add the carrots grated on a coarse grater, fry for another two to three minutes.
  2. Add chopped pepper, fry for two to three minutes.
  3. Then finely chopped zucchini pulp and chopped tomatoes or tomato. Salt, pepper. We simmer everything on low heat under the lid for about twenty minutes. The vegetable mixture should not be quite ready.
  4. In a baking dish (mine is a deep frying pan), spread the vegetable mixture.
  5. Lay the zucchini on top, fried side down.
  6. On each zucchini, you can drip mayonnaise and close the top cut with a thick circle of tomato.
  7. Cook in the oven for about 1 hour, at a temperature of 180-200 degrees. Enjoy your meal!
  • Zucchini - 2-3 pcs.
  • Tomatoes - 2-3 pcs.
  • Carrots - 1-2 pcs.
  • Refined sunflower oil - a little more than needed to grease the bottom of the baking dish (or pan)
  • Salt to taste
  • Cheese - 200-300 gr.
  1. Pour oil into a baking dish (or a frying pan without a handle).
  2. We cut the zucchini into circles about 1.5 cm thick. We put them in a mold (you can use several layers, I do 2-3), salt and “roll” in oil.
  3. We rub the carrots on a coarse grater, salt, stuff the zucchini tightly, sprinkle with oil.
  4. Cut the tomatoes into slices about 1-1.5 cm thick and lay on top of the carrot layer.
  5. We rub the cheese on a coarse grater and sprinkle a layer of tomato on top.

Everyone, look how appetizing it looks in the photo! We put in the oven on medium heat and after about 25-30 minutes the dish is ready. For meat lovers, you can lay a layer of minced meat on top of the zucchini (previously salt and pepper). Enjoy your meal!
