These applesauce cookies are suitable for both vegetarians and vegans. To prepare it we will need:

Applesauce- 2 cups, I note that sometimes there are skins left in the apple mixture, you don’t have to remove them, they fit harmoniously into these cookies :)

Dates- 1 cup (less can be used), as you noticed in this recipe, dates do an excellent job with this task!

Whole grain wheat flour- 1 cup. If you avoid flour in your diet, you can use any other flour, since in this recipe it is needed more for gluing the ingredients together.

Soda- 1 teaspoon;

Cinnamon- 2 teaspoons (to taste);

Making applesauce cookies is very simple. Wash the dates, remove the pits and cut into small pieces.

Add dates to applesauce, followed by flour, soda, cinnamon and mix well. The result is a thick, soft consistency with a beautiful cinnamon color. If desired, you can add nuts or seeds to the dough.

Using our hands, we form small cookies like round cutlets from the finished dough. We try to keep their thickness no more than 1 cm; the thinner they are, the better they will bake. They will rise further and become thicker as they cook in the oven. You can additionally pierce each cookie with a fork before putting it in the oven. Place on a baking sheet; I use a silicone mat or Teflon molds for baking, so I don’t grease anything with oil. Place in an oven preheated to 200 degrees for 40 minutes. Once the cookies are formed, place them on a parchment-lined baking sheet. Bake in the oven (180 degrees) for about 20 minutes.

Peanut Butter Oatmeal Cookies

Mix one tablespoon of peanut butter with crushed flakes (1 cup) and a tablespoon of coconut flakes. Grind the banana in a blender with the addition of a teaspoon of cinnamon. Next, place all the ingredients in a blender and add a couple of tablespoons of water, which will help achieve the desired consistency. When placing cookies on a baking sheet, you can place fresh berries, grated nuts or pieces of fruit on top of each cookie. Bake in the same way as in the first recipe.

Oatmeal cookies with egg whites

Mix a glass of crushed flakes with slaked soda (1/4 teaspoon). Separately, beat 6 egg whites, and then add ¼ cup of honey, which must be liquid, to the resulting fluffy mass. Also add brown sugar (50-70 g), some chopped dried fruits and a pinch of salt. Sugar can be replaced with fructose. After mixing everything together, place the dough on a sheet of parchment, setting the desired shape. The delicacy should be baked for about 30 minutes at 180 degrees.

  7. Place the dough on it, spreading the mixture in small mounds with the same tablespoon. The distance between the workpieces must be at least 2 centimeters. This is done to prevent the products from sticking together, since they will increase in volume during the baking process.

With apple jam

Cookies with apple jam are prepared somewhat differently. Although this will require a similar set of products.

For the test:

  • 1 cup of sugar;
  • 2 eggs;
  • 200 grams of margarine (or butter);
  • 400-500 grams of flour;
  • 1 teaspoon baking powder.

For filling:

  • 0.4 kilograms of ready-made apple jam.

In this case, the process itself is also not particularly complicated:

  1. First, the margarine needs to be melted and poured into a clean, deep container.
  2. Once it has cooled, add the eggs and sugar. Mix it all well.
  3. Add flour in portions and knead into an elastic but not very tight dough.
  4. Divide the semi-finished product into two parts. Place one of them (the smaller one) in the freezer for at least one hour.
  5. Line the inside of the baking tray with baking paper.
  6. Spread the second (larger) part of the dough on it in an even layer.
  7. Coat it liberally with jam on top.
  8. Use a grater to turn a frozen piece of dough into shavings.
  9. Sprinkle it evenly over the jam.
  10. Place the baking sheet in the oven and bake for 25 minutes at 200 degrees.

After this, the prepared pie will only have to be cut into small pieces with a sharp knife. The cookies are soft, juicy and incredibly tasty.

Lenten recipe

People who, for one reason or another, cannot currently consume food of animal origin will definitely like lean apple cookies. It is prepared just as simply as the previous two options.

  • 250 grams of flour;
  • 1 pinch of salt;

4. Knead soft sticky dough

5. From a pastry bag (I have a regular bag), we place future cookies of any shape (according to your imagination) onto parchment, making a small depression in the middle. You can just use a teaspoon. The main thing is to maintain the size so that you can choose the same paired cookies for each cookie.

6. Bake in an oven preheated to 190°C for 8 - 10 minutes. Cool on a wire rack without removing from the oven. This way the cookies will be fully cooked and browned.

7. Take applesauce (I have it ready-made, without sugar, it’s sweet in itself, look), apply it to one cookie and combine it in pairs with another. Top with a couple of the same puree

8. Leave the cookies for 1-2 hours so that they are soaked and the puree thickens and dries a little

Alternatively, the cookies can not be glued together and left individually, which is also very tasty!

Puree can be replaced with anything. This could be, for example, a cream dessert, honey, boiled condensed milk (if you are responsible for your figure), just melted hot chocolate without additives.
